Our inaugural Aligoté was hand picked early in the morning from our friends at Flâneur’s La Belle Promenade Vineyard. The fruit was pressed and settled overnight. From there it was divided into a neutral French oak barrel and our Italian amphorae. The wine fermented naturally and slowly, the oak barrel finishing in March, and the amphorae finishing in May. In August, we bottled the wine, unfined and unfiltered.

Aromatics of crushed oysters, honeydew melon, lime zest, pomelo and powdered sugar intermingle. The palate is broad but linear, driven by juicy acidity. Fresh citrus and bright stone fruit are surrounded by a mineral frame.
